Making my home a haven

I am doing well with the meal planning, buying within my budget, not spending on silly things, and keeping my house clean (using the Motivated Mom as a guide)...but this interested me in for something new for a change. I feel that as a working mom, I am doing okay...but as any of us know, we can all use a little uppers in our lives. This is a new challenge!

My morning routine goals (before the boys get up):
1) Bible Time (daily reading)
2) Breakfast (I never eat breakfast now!)
3) Make bed
4) Get ready
5) Wake boys and get them ready

WISHFUL...I wish that I could work-out in the mornings...but that won't be reality, so I won't put it on there.
By posting things on my blog...I am held accountable by you readers:) I know many of you probably don't care, but I know that I posted it on here and someone might sporadically ask:)

SUPER SAVINGS

Quote from my dad as I called them just laughing tonight in complete happiness of shopping alone and saving a TON, "Are there other people out there in this world as crazy as you are with your coupons?" Ummm Dad...yes! I don't even come close to ladies that are savings tons more than I. Thanks to my husband for letting me go a shop tonight by myself. I felt more put together and organized tonight by being able to shop alone. I was able to keep on my game plan and keep all my coupons together without having to wrestle someone away from the candy below the counter!!!

I must say though I did a tremendous job this week. This is probably the best week I have had all year (which I just started after the New Year)...so I could rephrase this to say the best week I have had EVER!!! Here is the break down:

Fun at the Elge's

My motivation is back up at full swing thanks to a great weekend at the farm! I told the boys early last week that we would be going to the Grandpa Dennis' farm. Almost immediately the boys looked at each other (while strapped in traveling to school in the morning) "We get to go to the farm and see sheep, pigs, cows...etc." Each boy took a different turn coming up with a new animal. I reminded them that we had been to Grandpa Dennis's farm many times and there were really only horses (but they are across the road). They were too excited and it was too cute, so I let them continue throughout the week.

We got to the farm as the tractor was pulling in out of the field on Friday night. It was a treat with the headlights and all. We proceeded to go about our business...takes us to Saturday. I was unfortunately not able to have a Pampered Chef party at my friend Chris's house, because her daughter was sick:(, but a blessing in disguise. We got to hang out with Georgene, Casey's Grandma and do a family bonding activity...cleaning out the garage. I LOVE DOING THIS...so it was even more fun to do it with everyone. We did a "Clean Sweep" of the garage and now they have a very nice and clean garage. It is amazing what an afternoon can do with any garage.

While cleaning the garage (let me draw a picture for those of you that have never been on their farm...their garage and barn - which are both white and not red like the story books - are by their house. There is a row of tall trees for a wind break and then Dennis's shop which is where the tractors, four wheelers and farm equipment live. To you or I you would think you were on the farm...but not to Kenner or Patton. To be "on the farm" you had to be on the other side of the wind break where the tractors are. We had to fish Kenner and Patton away from them several times throughout the weekend. As you can see from the pictures below, they did get to ride the tractors and the four wheeler...it isn't Disneyland Astraea...but pretty close to it!

The boys were also able to go across the road and hold new puppies and pet the horses. Kenner told me, "Mommy, the farmer called and said we can go see the animals now." Ah...life in storybooks are always fun! Enjoy the pictures...we sure enjoyed our time. Thanks Grandma and Grandpa and Levi Lucy and Great Grandma! Farm boys with their new hats

Great weekend except for ear infection





We had an extended extended weekend this weekend, hence the reason for a post with PICTURES!!! I have my laundry done, my motivated mom planner out for the week, meals planned and shopping lists somewhat finished.
Patton had a fever when I picked him up on Wed night. I stayed home with him on Thursday...no pay though OH WELL I will be saving it in my groceries and couponing I guess! We went to the doctor on Friday and a bad ear infection. THey gave us the 'nasty BM' antibodic to get rid of it. They were right on the N BM part...gross!

After the doctor we took a trip to CVS and got our meds then off to a park. It was beautiful out! We went to see Daddy at the AFB and I got a new id. It took long enough for Kenner to get to go into a plane with a flashlight. He had to come back and tell Bubbi all about it. Bubbi was cuddled on my lap the entire time, because he hadn't had Tylenol for a long time and didn't feel well!
Then we went home and anxiously waited for GRANDMA CARLECE, AUNT ANNIE AND COUSIN RYLAN to come over and spend the night. We went out to eat at Red Lobster...YUM YUM (after a 1 1/2 hour wait...I did have coupons!) Then we came home and had slumber party. We made french toast in the morning and all the boys sat at their own table. It was so much fun! Too bad for a rainy Saturday though:( Oh well, Grandma still took us to Runza to play. Thanks for coming down Annie and coming up Mom! It was a nice break!
Today we got up the normal time to hit early service and realized we were already late...daily light savings time. It was nice to go to late service, but after a Menard's trip and a meal at Taco Bell going to early service is much better and cheaper for our family. The boys didn't get naps because we didn't get home until 3:00. We did get to spend the afternoon at our favorite place though...Menards!

Meal Planning

I can't quite get my schedules to match up to the fancy names - Meal Planning Monday, Frugal Fridays. I just thought I would try my hand at putting up my meals this week (because I was searching for a few to use up items that haven't moved in my pantry or freezer:))

Saturday - Lunch - Make up on the spot:) Dinner - Svitak Family Pizza night
Sunday - Lunch - ???? I usually get inspiration the night before Dinner - CENTER Pulled PORK supper. Come and eat for a good cause!

Sweet N Tangy Pot Roast - Crock Pot

We were able to have Bob and Marilyn over for supper this week. Missed you Zane! It was a fun time to have people over and not worry about keeping the kids busy or cleaning up their mess at someone else's house. This is what I popped in the crock pot the morning of and served with mashed potatoes, green beans, salad, and bread. Yum Yum!

Sweet N Tangy Pot Roast
Ingredients:
1 boneless beef chuck roast (3 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup water
1 cup ketchup
1/4 cup red wine or beef broth
1 envelope brown gravy mix
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder
3 tablespoons cornstarch
1/4 cup cold water
Directions: Cut meat in half and place in a 5-qt. slow cooker. Sprinkle with salt and pepper. In a bowl, combine the water, ketchup, wine or broth, gravy mix, mustard, Worcestershire sauce and garlic powder; pour over meat. Cover and cook on low for 9-10 hours or until meat is tender. Combine cornstarch and cold water until smooth. Stir into slow cooker. Cover and cook on high for 30 minutes or until gravy is thickened. Remove meat from slow cooker. Slice and serve with gravy. Yield: 8 servings.

Taco Lasanga Crock Pot Style

I had never made something in the crock pot on high that turned out good. I have made several things that were not good. For example, attempting to cut down the cooking time on a roast in the crock pot is not only a waste of time, but money as well!. Here is one that our family liked.

Taco Lasagna
Ingredients:
1 pound ground beef
1/2 cup chopped green pepper
1/2 cup chopped onion
2/3 cup water
1 envelope taco seasoning (or Southwest Seasoning Mix from Pampered Chef!)
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
6 flour tortillas (8 inches)
1 can (16 ounces) refried beans
3 cups (12 ounces) shredded Mexican cheese blend
Directions:
In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in the tomatoes. Simmer, uncovered, for 10 minutes.
Make an X or star with three long pieces of foil in crock pot (this helps you get it out when finished!) Make sure you have enough hanging out on the top. Place one tortilla in the bottom. Spread with half of the refried beans/black beans and beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and cook in crock pot on HIGH for 2-3 hours or until heated through and cheese is melted. Yield: 9 servings.

Crockpot made even simplier


On many blogs, women post these elaborate recipes. Great for you...but I get lost at 5 or more ingredients:) I am all about saving money and time. Here are two recipes for you that are less than 2 lines long.

Put 4 Sirloin steaks in a crockpot. Season with what ever you want. Put lid on and cook for 8-9 hours. No liquid nothing. Tear apart and serve.
Use as beef sandwiches, beef for soups, hot beef sandwiches, or what ever your heart desires.
Put 4 foil wads in bottom of crockpot. Put whole chicken (taking out the gross stuff in the middle of course). Season with what ever (Italian Seasoning from Pampered Chef:)). Put lid on for 8-9 hours.
As you can see in my picture, it was so tender that I couldn't take it out in one piece. YUMMY! I was extremely proud of myself to cross over to the "Great Grandma Wilma" or Grandma Jackie side today. I about threw out the chicken when I couldn't tap out the parts on the inside, but I withstood my stomach and reached in and got all the little giblets out. I am very proud of myself if you can't tell that I did cook a whole chicken tonight. I am even more proud that it was only $3.50 (.69/pound) on sale and I have two more meals out of it!

Saving Money 101 in Lincoln, NE

So many of us these days are looking to our pennies more often than we have in the past. With the new year comes many resolutions and to be honest many of my resolutions usually don't last past the first couple weeks of the year. Mine this year have stuck. I am having so much fun with these "stuck" resolutions.

I think these have stuck, because I have developed relationships with new and old friends/family in order to keep me accountable for my expendetures. They also help me in teaching me how to find a good deal and how to save money.

Every family is different...but I have learned from many different families. I thought I would share mine.

Living in an area where the only "discount" warehouse is Sam's or Walmart. Unfortunately, they are not much in the money saving business if you go in without a list or without the knowledge of prices of items. I decided to go to the cheapest place that I could find things - North Walmart in Lincoln. I priced out all the items that I normally buy. How you may be asking? Yes I was the one with my dorkey coupon binder writing down all the prices as I soured each aisle moving at a snail pace (thanks to my Mom, because she had my boys) writing down prices of things. This way I know that I can drive clear across town and purchase something at that price if I have to....my benchmark price. I also went to Sam's and priced things there to see how much they compare. It took me about 4 hours and I am still not done...but times are changing and so will the prices of groceries...so just a benchmark price.

Now that I have an idea of how much a particular item costs, I can't get sucked into the tags that all the grocery stores put up in their aisles that once sucked me in so bad that I walked out of the store with many "deals" but they weren't...just good strategies...tag everything and anyone that doesn't know better will buy them! Yep that was me!

Now plan my meals according to the sale ads. At first I had to plan two weeks, so that I could get a head of the game. Now I plan for the next week. So with my grocery store trip below...you can probably guess that we will have pizza next week:)

I always go grocery shopping on Wednesday nights (tonight was different, because we didn't go to Awana last night, Bubbi had a fever). I wake up early on Wed mornings, sit at my computer, go through all the grocery ads (because they all come out on Weds in Lincoln, except for an occasional sneaky Super Saver), and have my cost sheet (excel spreadsheet) open on my computer. I go through all the ads and find out what the good prices are. Once I have that, I go through and decide what I need (my need list is on my refridgerator on things I am getting low on) and what I am going to have the next week.

My goal is to spend $20 a week on groceries and less than $20 a week on other items (my CVS and Walgreens purchases). I have done pretty well staying within my budget, except for my craze over the cheese!!!!!!!!!!!!!!

I can attest to our check book balance that something is being saved:) It is either my entertainment budget, because I don't feel the need to do other shopping (i.e. cute clothes for the boys, toys for them, clothes for me) because I get my fix and HIGH off the sales and coupons I am using or me spending less on groceries or not eating out as much. I also think that adding cable to our lives has cost us $15.00 more a month, but is saving us SO much more in DVD's we used to buy or rent along with the late fees and gas it took us to get them.

I encourage any or all of you to start to
#1 plan your meals. You won't believe how easy life is when you don't have to worry about what you are going to have and how much more time you spend with your family. Kenner and Patton are learning to do chores at young ages... 2 and 3. NO JOKE!! Kenner cleaned off the dining room table tonight all by himself, while I did the dishes and loaded the dishwasher. It brought me such joy to see him be so responsible and LOVE to do it! (we will see how long this lasts)
#2 only buy groceries on Sale! Walmart will price match anything. If you don't have a Walmart within 20 miles of you...you must live in the remote areas of the world and not sure what you can do to save money except to grow it and butcher it yourself:) Just kidding!

I can't believe how much fun saving money is!

I really can't believe how much excitement I am in having saving money, cooking meals EVERY night and keeping my house cleaned has been for me the past two months...really...no joke. Just ask Annie, Kendra or Becca about my excitement:)
Here is my grocery run this week. I did go extremely over my budget...but CHEESE WAS OUT OF THIS WORLD and I am still learning at this Walgreens/CVS game.
